Since August 2013, Quantum Produce has been dedicated to the importation and distribution of fruits and vegetables from Mexico, as well as the purchase and commercialization of fresh produce within the United States and Canada.

Grilled Butternut Squash

Ingredients

  • Butternut
  • Water
  • Olive oil
  • Salt and pepper

Preparation

  1. Peel squash.
  2. Cut in half lengthwise and remove seeds.
  3. Cut into 1–1¼″ cubes.
  4. Bring pot to a boil.
  5. Boil or steam until tender or al dente.
  6. Cool in cold water and drain.
  7. Toss with olive oil; season to taste.
  8. Thread cubes onto skewers.
  9. Heat grill to medium-high and oil grates.
  10. Grill, basting with remaining oil, turning 5–7 min until browned.

Grilled Spaghetti Squash

Ingredients

  • Spaghetti squash
  • Baking sheet
  • Butter
  • Salt
  • Honey or molasses

Preparation

  1. Preheat oven to 325ºF.
  2. Cut lengthwise in half and remove seeds.
  3. Place cut-side down on rimmed sheet with a little water.
  4. Bake 25 minutes; remove carefully and cool.
  5. Before serving, grill cut-side down 3–4 min; move to cooler side.
  6. Add 1 Tbsp butter to each half; season with salt and drizzle honey or molasses.
  7. Cover grill and cook 2 more minutes; shred with fork and serve in shells.
